For coarse aggregate the wire-basket method is normally used: a saturated surface-dry sample is weighed in air and then again while suspended in water, and specific gravity is calculated from the difference (the buoyancy/displaced volume).

Along with fine aggregate specific gravity, this is one of the standard inputs to absolute-volume concrete mix design.
